Ground Turkey and Garlic Sauce

2-4 tablespoons extra-virgin olive oil
1/2 pound ground turkey, or lean ground beef
3-4 cloves garlic, minced
3-4 green onions, thinly sliced
1/2 teaspoon sea salt
1/4 teaspoon freshly ground pepper
1/2 teaspoon good quality dried Italian herbs (oregano)
1/4 teaspoon Zip or cayenne
2 cups tomatoes or sauce
grated Parmigiano-Reggiano cheese, for serving

In batter bowl, combine the oil, turkey, garlic, onions, salt, pepper, herbs, and Zip. Break up the turkey into small pieces. Cover with waxed paper. Microwave on high for 3 minutes. Stir, and microwave another 2-4 minutes, or until meat is done. Add the tomatoes. Microwave on high for 3 minutes, then on half power for 10 minutes. Serve with freshly cooked pasta, garnished with freshly grated cheese.
