Peach Chutney or Relish

From Dorothy McNett's recipes at

1/4 cup apple cider vinegar
1/4 cup raw sugar
2 cups chopped peaches, about 4, firm to medium ripe, peeled if desired
1/4 cup golden raisins
1 red bell pepper, chopped
1 jalapeņo, seeded and chopped
1 teaspoon grated fresh ginger
1/2 teaspoon sea salt

Combine all ingredients in glass or ceramic batter bowl. Cover with a glass or ceramic lid. Cook in microwave for 5 minutes. Stir. Cook another 4- 5 minutes, or until peaches are tender. (OR If desired, place all ingredients in a stainless steel saucepan. Bring to a boil, reduce to simmer, and cook stirring from time to time for about 20 minutes.) Cool and serve. Makes about 3 cups, and can be stored in refrigerator for 2-3 weeks. Enjoy!
