An old Iowa summer relish recipe, recreated by Dorothy McNett. 3 ears fresh corn, kernels cut off Combine all ingredients in 2-3 quart microwave safe bowl. Cover. Microwave on high 5 minutes. Stir. Microwave another 10-15min., or until vegetables are tender. This can be covered and stored in the refrigerator up to 3 months.
