Honey Corn Relish

From Dorothy McNett's Recipe Book at www.dorothymcnett.com. An old Iowa summer relish recipe, recreated by Dorothy McNett.

3 ears fresh corn, kernels cut off
1/2 small cabbage, cut into 1/4 inch cubes
1/2 cup finely chopped onion
1/2 cup diced red bell pepper
1/2 cup diced green bell pepper
1 tablespoon Sweet-Hot honey mustard
3/4 cup cider vinegar
1/2 cup honey or sugar
1 1/2 teaspoons dry mustard
1 tablespoon salt
2 teaspoons, or less, crushed hot red peppers
1 tablespoon finely chopped fresh ginger
4 large cloves garlic, smashed, peeled, and minced

Combine all ingredients in 2-3 quart microwave safe bowl. Cover. Microwave on high 5 minutes. Stir. Microwave another 10-15min., or until vegetables are tender. This can be covered and stored in the refrigerator up to 3 months. You can also cook this about 20 -30 minutes in a stainless steel pan rather then microwaving it, if desired.
