Quick and Really Good Pizza

From Dorothy McNett's recipes at www.dorothymcnett.com. It is the ingredients, so make sure everything is of best quality! You will be adjusting the amounts of tomatoes, zucchini and cheese depending on the size of the crust. Be creative!!!

1 homemade (see recipe) or ready-made pizza crust
cornmeal, semolina, or polenta for sprinkling
1-2 cups fresh, red-ripe sliced tomatoes, or drained Pomi
1 fresh zucchini, thinly sliced
1-2 tablespoons extra-virgin olive oil
fine or coarse sea salt
6 garlic cloves, peeled and thinly sliced
about 20 very thin slices good quality salami
1/4-1/2 pound good quality mozzarella cheese, sliced
1 teaspoon snipped fresh oregano, or 1/2 teaspoon dried
1/4 cup freshly grated Parmigiano-Reggiano cheese
1/4 cup freshly grated Pecorino Romano cheese

fresh basil leaves, if available

Place baking/pizza stone on bottom shelf of oven, and remove the top shelves so that they will not be in your way! Preheat oven to 500 degrees. Put the crust on a pizza peel which has been sprinkled liberally with the polenta or semolina. Place the tomatoes and zucchini on the crust. Sprinkle with oil, add remaining ingredients. Slip pizza from the peel onto the hot pizza stone and bake about 15 minutes. Garnish with fresh basil leaves and serve.
