A salad that can be kept in the refrigerator several days, or also perfect for taking to a picnic or a party! It is like a pickled fruit salad, really delicious. Easy to cut in half for a smaller version. 3/4 cup fruity vinegar In glass or ceamic batter bowl, combine vinegar, water, sugar, and salt. Cook in microwave 3 minutes. Whisk well, making sure that the sugar is dissolved. Add the mint and ginger. Cool. Line a 9 by 13 baking dish or large bowl with lettuce leaves. Arrange peaches, cucumbers, cherry tomatoes, and green onion over lettuce. Pour the dressing over all, tossing gently. Garnish with watercress. Can be served room temperature, or well-chilled.
