Mixed Potato Salad

2 small red potatoes
2 small white potatoes
1 yam or sweet potato

1/2 onion, chopped
1-2 hard-cooked eggs, chopped
1/4 to 1/2 cup vinaigrette
sea salt
freshly ground pepper, as desired
parsley for garnish

Scrub the potatoes, pierce the skin of each one with a fork. Microwave or bake the potatoes until done. Cool. Remove skins if desired, but usually I only peel the yam or sweet potato. Cut into small pieces, combine with the onion, eggs, salt and pepper. Stir in just enough dressing to make it "right"! Snip on fresh parsley or other herbs and serve.
