Vegetable Beef

From Dorothy McNett's recipes at Quick and easy. Olive oil adds a special flavor in the marinade. And then it is best to use grapeseed oil for the stir-frying.

1 pound beef steak, top round or sirloin, sliced thin and marinate in the following sauce:
1 tablespoon cornstarch
1 tablespoon soy sauce
1 - 2 cloves minced garlic
3-4 slivers of fresh ginger root
2 tablespoons extra virgin olive oil

1-2 carrots
1 small onion
1 -2 stalks broccoli, peppers, etc.

1 tablespoon cornstarch
1 tablespoon soy sauce
2 tablespoons oyster sauce
1/2 cup water
2 - 3 tablespoons grapeseed oil for fryiing

While beef is marinating in first 5 ingredients, prepare the vegetables by slicing them on an angle. Place in glass or ceramic batter bowl, cover, and cook in microwave for 3-4 minutes. Set aside. Combine remaining 4 ingredients in glass measuring cup and whisk well. Heat wok or skillet and add about 2 - 3 tablespoons grapeseed oil. Quickly stir and fry the meat, then add the vegetables and sauce ingredients. Stir and cook until sauce has thickened. Garnish and serve.
