Apricot Dessert

1 pound cake, cut into serving pieces

1 can (6 oz.) frozen orange juice concentrate
2 tablespoons lemon juice
1/2 cup sugar
1 1/2 tablespoons cornstarch
1 tablespoon chopped candied ginger
1/4 cup water

1-2 cups chopped fresh apricots

Combine orange juice, lemon juice, sugar, cornstarch, ginger, and water in batter bowl. Whisk well. Microwave on High for 2 min. Whisk well. Microwave another 1-3 min., or until thickened. Add apricots and serve over pound cake, garnished with mint leaves.
