Bourbon Balls

From Dorothy McNett's recipes at www.dorothymcnett.com.

1 cup pecans, or walnuts, or almonds as desired
2 cups vanilla wafer crumbs (or chocolate cookies)
1 cup organic powdered sugar
1/4 cup bourbon or brandy, or even port
3 - 4 tablespoons apricot jam, or any fruit jam
1-2 tablespoons unsweetened cocoa powder

In processor with steel chopping blade in place, chop the pecans and the cookies. Add powdered sugar, bourbon and jam and blend well. With hands, form into 1 inch balls. Roll balls in cocoa powder and place on waxed paper. If time allows, let them stand several hours to firm up a bit.
