Lemon Spritz

From Dorothy McNett's recipes at www.dorothymcnett.com. If you do not have or want to use a cookie press, simply shape with a spoon or your hands into interesting shapes. Tuck a few dried cranberries into the flattened dough to make a wreath, etc.

3/4 cup unsalted butter, softened
1 cup powdered sugar (the organic powdered sugar is great!)
3 tablespoons lemon juice
1 teaspoon finely grated lemon zest
2 1/4 cups unbleached all purpose flour
1/4 teaspoon fine sea salt

dried fruits and nuts, as desired, for decorations

Preheat oven to 350 degrees. Combine butter, sugar, lemon juice and zest with electric mixer on medium speed until well blended. Beat in flour and salt until dough is smooth. Spoon dough into a cookie press fitted with a template of desired shape. Press cookies 2 inches apart onto silicone baking mat or parchment paper lined baking sheet. Bake 10-12 min. or until golden brown. Let cookies cool 2 minutes on sheets, then remove to racks and let cool completely. Sprinkle with powdered sugar or colored sugars, when still warm, if desired.
