Champ / Irish Mashed Potatoes

3-4 baking potatoes
Scrub (peel if needed or desired) and cube the potatoes. Place in a glass or ceramic batter bowl. Cover. Cook in microwave using 3 - 6 minutes per potato as your guide. Test with a fork, adding a bit more time if needed. Or, cook in boiling water until tender. Heat the milk with the chopped green onions. Mash the potatoes with the warm onion-milk, and beat in some butter. Season to taste with salt and pepper. Serve in individual bowls with a knob of butter melting in the center.
