Pork Tenderloin with Curried Apples

From Dorothy McNett's recipes at www.dorothymcnett.com. A great way to cook and serve pork tenderloin without roasting it. Use 1/2 of a tenderloin roast if you wish to make a smaller amount.

1 pork tenderloin, about 1 pound
1/4 teaspoon sea salt
1/4 teaspoon pepper
paprika
1 tablespoon unsalted butter
1 apple
1/2 teaspoon curry powder
1 - 2 tablespoons good quality chutney
cilantro, for garnish

Cut pork into about 16 thin slices and pound slightly. Season with salt, pepper, and paprika. Heat butter in skillet, and sauté pork slices for several minutes, or until done. In meantime, cut apple into about 16 wedges. Place in a glass or ceramic small bowl or measuring cup, adding the curry powder and chutney. Cook in the microwave for 1-2 minutes. Place the meat slices on a cracker or bread slice, top with the apple, and garnish with cilantro, brushing on more chutney, as needed.
