Harvest Vegetable Sauté

From Dorothy McNett's recipes at www.dorothymcnett.com. A quick and delicious way to mix and match fall and winter vegetables. The pears add natural sweetness and always taste so good cooked with parnsips.

1-2 onions
1-2 yams or sweet potatoes
1-2 parsnips
3-4 small golden beets, if available
3-4 cloves garlic
1-2 firm pears
1-2 tablespoons extra virgin olive oil
1-2 teaspoons honey
salt and pepper, as desired

Wash and scrub vegetables and pears. Only peel them if necessary. Slice into serving sized pieces or chunks. Heat skillet or sauté pan, add olive oil. When oil is hot, quickly add the vegetables and pears. Stir and cook for about 6-8 minutes, or until they are cooked to your liking. Drizzle over 1-2 teaspoon of honey, sprinkles of salt and pepper and stir well. Serve.
