Applesauce

From Dorothy McNett's recipes at www.dorothymcnett.com. Add about 1/4 teaspoon dried chipotle chile pepper, or fresh grindings of black or white pepper for a special twist.

3-4 apples, cored (peel if desired, not necessary)
1/4 to 1/2 cup sugar, depending on apples and your taste
1 teaspoon cinnamon

for one person:
1 apple
1 tablespoon brown sugar
dash of cinnamon

Cut apples into chunks and place in batter bowl. Stir in sugar and cinnamon. Cover. Microwave on high for 8-10 minutes, or until apples are tender. Cool slightly, and mash with a fork or use the food processor if you like a pureed sauce. Serve warm or cold, as a dessert or as an accompaniment to meat or chicken dishes. For one person: microwave 3 minutes.
