Old Fashioned Vinegar Taffy

From Dorothy McNett's Recipe book at www.dorothymcnett.com.

3 cups sugar
1 1/4 cups hot water
1/4 cup butter
2 tablespoons vinegar
1 teaspoon vanilla

Combine sugar, water, butter, and vinegar in a 2 quart or larger heavy bottomed saucepan. Bring to a boil, stirring occasionally. Then, cook without stirring until the mixture reaches 260 degrees on a candy thermometer. Remove from heat and add vanilla. Pour into a shallow greased platter and let cool, turning the mixture toward the center with a spatula as edges firm. Do not stir. When candy is cool enough to handle, pull until taffy changes to a shiny platinum ribbon. Cut into bite-sized pieces with buttered scissors. Cool, then wrap pieces individually in waxed paper. Store in airtight containers.
