Peanut Brittle or Mixed Nut Brittle

From Dorothy McNett's recipes at Use a glass or ceramic batter bowl and your microwave oven for this wonderful brittle.

1 potato
1 cup raw sugar
1/2 cup corn syrup
1 cup peanuts, or mixed nuts
1 teaspoon unsalted butter
1 teaspoon real vanilla extract
1 teaspoon baking soda

Cut the potato in half and set aside as it will be your "pusher" to get the brittle spread out in the pan when it is done. In glass or ceramic batter bowl, combine sugar and syrup and cook in microwave 2 minutes. Stir. Cook another 2 minutes. Stir in nuts, and cook 3-4 minutes more until light amber brown. Add butter and vanilla, and cook 1 minute more, depending on your previous timing. Peanuts will be lightly brown and syrup will be thick, gooey, and dark amber brown. Add baking soda, stir until light and foamy. Quickly pour onto lightly buttered or silicone mat lined baking sheet, using the potato, sliced in half, to spread the brittle into a thin layer. When cool, break into pieces.
