Cool Fruit Salad or Cheese Appetizer

From Dorothy McNett's recipes at www.dorothymcnett.com. Made with pure juice, not packaged jello mixes

2 cups of your favorite juice (apple, cranberry, orange...)
1 envelope unflavored gelatin
1 1/2 cups fresh fruit, chopped finely
1/2 to 1 teaspoon lemon juice

Brie or other soft cheese, for serving

Combine the gelatin and 1/2 cup of juice. Allow to stand 2 minutes to soften gelatin. Add remaining juice and heat to dissolve the gelatin, (about 1 minute in microwave, or 1-2 minutes in a saucepan on the stove) making sure that all of the particles are dissolved but do not let it boil. Pour into a bowl or a mold. Chill about 15-20 minutes, and then add the chopped fruit and lemon juice. Chill several hours to firm up, and then unmold onto a serving platter. Arrange some nice soft cheese, such as Brie or St. Andre along side and serve.
