Chocolate Brownies with Chocolate Sticks
From Dorothy McNett's recipes at www.dorothymcnett.com. I have added a bit of freshly ground pepper and some chia seeds to a common brownie recipe, and it makes for a fine dessert.
1/2 cup unsalted butter 1/4 cup semi sweet chocolate chips, or 2 oz. unsweetened chocolate 1 cup raw sugar 2 eggs 1 teaspoon real vanilla extract, or vanilla bean paste 1/4 teaspoon salt 1/4 teaspoon freshly ground pepper, or chili pepper, if desired 2 tablespoons chia seeds, if desired 3/4 cup all-purpose unbleached flour
aged cheddar cheese, cut into stick shapes 1/2 - 3/4 cup dark chocolate chips sprinkles of semi-coarse sea salt, or chia seeds, or hemp seeds...
Preheat oven to 350 degrees. Lightly brush a bit of oil or butter over a 8 by 8 inch baking dish or pan. Set aside. Place butter and chocolate in glass or ceramic batter bowl. Melt in microwave 1 minute. Stir, adding 20-30 seconds to finish melting if necessary. Add sugar and eggs and whisk well. Blend in vanilla, salt, pepper, chia seeds, flour and nuts. Spread batter into the oiled pan. Bake 30 - 35 minutes, until nicely browned and the top tests done. Place on a rack to cool. In meantime, make the chocolate sticks, figuring 2-3 per person. Cut the cheddar into stick shaped pieces about 2 - 3 inches long and 1/4 inch thick. Place chocolate chips in glass measuring cup and melt in microwave 30 seconds. Stir, and add 30-40 seconds more, stir to finish the melting, adding 30 seconds more if needed. Line a baking sheet with parchment or waxed paper. Dip the cheese sticks into the chocolate to cover completely and place on the paper lined sheet. Sprinkle with a few kernels of salt or seeds, as desired. Allow to cool completely. When ready to serve, place a brownie on a plate and then arrange 2-3 cheese sticks on top, and serve.
