Mustard Sauce

From Dorothy McNett's recipes at www.dorothymcnett.com. This was orginally from Toby, a cook at The Circle Bar Guest Ranch in Utica, Montana about 1963. I have changed it from the double boiler method of huge quantities to a small batch made in your microwave oven for perfect results.

2 tablespoons good quality dry mustard
1/2 tablespoon flour
1/2 cup half and half or cream
2 egg yolks
1/4 cup raw sugar
dash of sea salt
3 tablespoons white wine vinegar

Whisk together mustard and flour in a glass measuring cup. Whisk in remaining ingredients. Cook in microwave 1 minute. Whisk well. Cook another 1-2 minutes, or until thickened. Serve warm or cold. This is wonderful on ham, fish dishes and with vegetables.
