Norwegian Fattigman

From Dorothy McNett's recipes at www.dorothymcnett.com. These are often called Poor Man's Cookies, or Poor Cake.

6 egg yolks
1/4 cup sugar
1/2 teaspoon sea salt
1 teaspoon ground cardamom, cinnamon or nutmeg
1 tablespoon melted butter
1/3 cup whipping cream
2 cups all purpose unbleached flour

corn or peanut oil for deep frying
powdered sugar, for sprinkling

Beat egg yolks until thick and lemon colored. Gradually beat in sugar, salt and cardamon. Gently stir in the butter. Whisk cream until soft peaks form. Fold into egg mixture. Gradually fold flour into mixture to make a soft dough. Chill well. Divide dough in half. On lightly floured surface, roll each half to 1/8 inch thickness. Cut dough into 2 inch wide strips, then slash diagonally at 3 inch lengths to make diamonds. Cut slit in center of each diamond and pull one end through. Fry a few at a time in deep fat (375 degrees) for 1-2 minutes, until just light golden brown. Remove with a slotted spoon to a paper towel lined baking sheet. While warm, sift powdered sugar over cookies.
