Just a Little Layer CakeFrom Dorothy McNett's Recipe Book at www.dorothymcnett.com. 4 eggs Preheat oven to 350 degrees. Butter and then line a 9 inch round cake pan. With electric mixer, beat together the eggs and sugar until thick and pale and the mixture forms a ribbon. Fold in the sifted flour in batches, adding the combined butter, lemon zest, and lemon juice with the last batch. Pour into the pan. Bake for 25-30 minutes until a skewer or cake tester inserted in the center comes out clean. Let cool in pan on a wire rack for 5 minutes. Then invert onto a wire rack to cook completely. Cut the cake in half. Spread one half with the lemon curd or whipped cream, and then top with the other. Cut into wedges to serve. Recipe created 1995-09-26. © 1996-2013 Dorothy McNett.
