Caramelized Onion Pizza
From Dorothy McNett's recipes at www.dorothymcnett.com,. Or, instead of a pizza, make the onions and also add the walnuts, herbs, and Gorgonzola. Toss into 1 pound of freshly cooked pasta. Either way, this is a great "take to a picnic" food as either one is delicious served hot or cold.
1 large ready to use pizza crust (make your own, or use a good quality ready to use one)
Melt butter in sauté pan and add the onions and cook slowly for 30 minutes, until browned. Season with salt and pepper and set aside. Preheat oven to 475 degrees. Place the crust on a baking sheet with sides. Cover the crust with the onions and distribute the cheese over the onions and sprinkle with the chopped walnuts. Add herbs as desired. Brush the exposed edges of the crust with a bit of olive oil. Transfer to hot oven and bake until crust is golden and walnuts are toasted, about 12 - 15 minutes. Cut and serve, either as a main dish or make smaller pieces and serve as an appetizer.
