Amazing Grazing Vegetables

From Dorothy McNett's recipes at Use any fresh local vegetables. Cut into interesting sizes and shapes and serve them raw, or cooked, as desired.

your choice of fresh local vegetables, washed and sliced as desired
3 egg yolks
2 tablespoons fresh lemon juice
1/2 cup unsalted butter at room temperature
1/4 teaspoon fine sea salt
freshly ground pepper, to your taste

Wash, slice and arrange vegetables on a beautiful platter. (If you desire to cook them first, place vegetables in a glass or ceramic dish. Cover with glass or ceramic lid or waxed paper and cook in microwave, using 5 minutes per pound of vegetables as your guide. Set aside to cool and then arrange on a platter.) In glass measuring cup, whisk the egg yolks, adding lemon juice as you whisk. Cut butter into 3 equal sections. Add 1/3 of butter to egg yolk mixture and cook in microwave 30 seconds. Whisk well. Add second piece of butter and cook another 30 seconds and whisk well. Repeat procedure with the third piece of butter, whisking well until mixture is smooth and fluffy. Season with salt and pepper, and serve with the vegetables.
