Ostrich Pasta Sauce

1 pound ostrich, ground
1onion, chopped
2-3 cloves garlic, minced
2 tablespoons extra-virgin olive oil
1 pound ground ostrich meat
fresh or dried herbs, such as sage or rosemary
salt and pepper to taste
3-4 red ripe tomatoes, chopped, or 1 cup or more of good quality prepared tomato sauce

1 pound cooked pasta
1/2 cup freshly grated Parmigiano-Reggiano cheese

In sauté pan, combine the oil, vegetables, and meat and brown. Add seasonings and tomatoes and cook at least 5 minutes, or even more, to blend. Reduce heat, and simmer until thickened slightly. Pour over cooked pasta and garnish with cheese.
