Fastest Ever Dried Beans

From Dorothy McNett's Recipe book at www.dorothymcnett.com.

1 pound dried beans
1 onion, chopped
1 tablespoon olive oil
1-2 tablespoons dried herb rub of choice
1/2 teaspoon salt
Water or broth to cover the beans

Place all ingredients in pressure cooker and lock lid in place. Bring to high pressure and cook for 25 minutes. Let pressure come down naturally, or use a quick release method. Use a slotted spoon to check the consistency of the beans. Simmer without the cover a few more minutes, if desired.
