Banana Nut Muffins

From Dorothy McNett's Recipe Book at

2 1/4 cups oat bran cereal
1 tablespoon baking powder
1/4 cup brown sugar
1/3 cup chopped walnuts
1 1/4 cups milk
2 very ripe bananas
1 egg or 2 egg whites
2 tablespoons olive oil, or grapeseed oil
1/2 teaspoon cinnamon

Preheat oven to 425 degrees. Whisk the dry ingredients in batter bowl. In food processor, with steel chopping blade in place, whirl the bananas, milk, egg, and oil. Add to the dry ingredients and mix gently, do not over-mix or you will have tunnels in your muffins. Line the muffin pans with paper baking cups and fill them 2/3 full with the batter. Sprinkle with the cinnamon. Bake for about 15- 20 minutes, or until nicely browned.
