Stewed Prunes with Maple Syrup

1/2 pound dried, pitted prunes
1/2 cup water
3 tablespoons maple syrup
1/2 lemon, sliced very thin and seeds removed
1/2 cup port wine
walnut halves or whole almonds

In batter bowl, combine the prunes, water, syrup, and lemon slices. Cover. Microwave on high for 2 minutes, then on half-power for 5 minutes, or until prunes are cooked but not mushy. Add the port and allow to cool. Place in a jar with a tight fitting lid and chill thoroughly. Shortly before serving, fill the prunes with the nuts, or just serve them with some chopped nuts over the top. Makes a healthy snack instead of candy. Careful, not too many at once!
