Grilled Polenta

From Dorothy McNett's Recipe Book at

8 cups water
2 tablespoons olive oil
1 teaspoon sea salt
1 package instant polenta meal, white or yellow (17 oz.)

Bring water and oil to a rapid boil. Remove from the heat and with a wooden spoon, stir in the polenta. Mix well. Continue to cook over medium low heat, stirring, for about 5 minutes, or until done. Pour into an oiled pan to a depth of about 2 inches. Cool. Cut into squares, or use cookie cutters and cut into interesting shapes. Heat griddle or large saute pan. Brush the polenta with a little oil. Cook until browned on one side, gently turn to brown on second side.
