Provenšal Tomatoes

small roma tomatoes
French olive oil
salt and pepper, to taste
snipped fresh parsley
cracker crumbs, very fine

Chop tomato very fine, but do not let it get frothy. Add remaining ingredients, and pile onto the plate at serving time for an edible garnish. This could be piled into a hollowed out tomato shell, or even on a toast square, etc.
