Green as Money Salad

From Dorothy McNett's recipes at www.dorothymcnett.com. Short on grocery money? Why not have lots of green salads!!! This is also wonderful with dried cranberries and spiced nuts. Try serving this on a beautiful dinner plate with a nice slice of herbed salmon on the top. I featured this recipe for one of our television shows, Central California Cooking with Dorothy McNett, produced by Michael Eakins of EFPN. Everyone in the audience was seen eating their local Salinas Valley greens!

freshly washed and dried salad greens
1-2 oranges, peeled and sliced (or ripe pears)
1 small sweet onion, thinly sliced
1-2 tablespoons Balsamic vinegar
2 tablespoons orange juice
1/2 teaspoon crystalline brown sugar
1/3 cup extra-virgin olive oil
pinch of sea salt
several grindings of peppercorns

Arrange greens on plates or in a salad bowl. Toss in the sliced oranges, onions and other fruits of choice. In a small measuring cup, whisk together vinegar, juice, sugar, olive oil and seasonings and pour over the greens. Toss gently. Garnish with more citrus slices and grated zest. Also wonderful with a snipping of fresh mint leaves.
