Pumpkin Pie in a Glass
From Dorothy McNett's recipes at www.dorothymcnett.com. Instead of baking a traditional pumpkin pie, make this pudding parfait and serve in wonderful stemmed glasses or sherbet cups, etc.
3 large eggs
In glass or ceramic batter bowl, whisk together the eggs, sugar, and sorghum. Whisk in the half and half, pumpkin, vanilla, salt, cinnamon, and ginger. Blend well. Cook in microwave 2 minutes. Whisk well. Cook another 2 minutes; whisk very well and then cook another 2 minutes. Continue until the pudding has set and is smooth,usually just 1 minute more. Whisk in the crème fraîche. Cover and let stand about 20 minutes. Whisk well and assemble the parfait, using the cookies or crumbs between layers. Serve warm, or chill and serve with whipped cream.
