Pork Chops Sauté

From Dorothy McNett's recipes at www.dorothymcnett.com. A nice way to serve some quick and easy pork chops and they are cook with or without the zucchini! If you have any pork chops left-over, grind the meat and use as a stuffing for Pierogies.

2-3 center cut pork or lamb chops
1/2 teaspoon paprika
snipped fresh rosemary, or a pinch of dried
sea salt
freshly ground peppercorns
1 tablespoon extra-virgin olive oil
1-2 tablespoons lemon juice, sherry, or white wine

1-2 zucchini, grated or cut into matchstick pieces

Sprinkle chops with paprika, rosemary, salt, and pepper. Heat oil in skillet or sauté pan until a light haze forms. Add the chops, reduce the heat, and cook on first side about 4-5 minutes. Turn over, cover and cook another 3-4 minutes. In meantime, place grated zucchini in covered ceramic bowl. Microwave on high 2 minutes. Arrange on flat platter. Test meat for doneness, and place cooked chops on top of zucchini. Add the juice or wine to the hot skillet and cook while stirring with a heat resistant spatula to bring up the browned bits and to reduce the sauce, about 30-60 seconds. Drizzle the sauce over the chops.
