Sunny Health Bread

From Dorothy McNett's Recipe Book at www.dorothymcnett.com. This can be made by the traditional Hand Kneading Bread method, or with your bread machine.

1 cup warm water (110-115 degrees)
2 1/4 teaspoons instant dry yeast, or active dry yeast (1 pkg)
1 3/4 cup unbleached bread flour
1 cup whole wheat flour
1/4 cup wheat germ or oatmeal
1/4 cup cottage cheese or crumbled feta
1 teaspoon fine sea salt
1/4 cup honey
1 tablespoon unsalted butter
1/2 cup sunflower seeds (lightly chopped)
1 teaspoon sesame seeds

For bread machines, place ingredients into bread pan in the order listed. When programming bread machine select the wheat setting, if available. It is advisable to add the sunflower and sesame seeds after the first kneading. Some machines have a special program for adding seeds and nuts. Otherwise, just watch and add the seeds after the first kneading. After the baking cycle ends, remove bread from pan, place on cooling rack, and allow to cool 1 hour before slicing.

For hand kneading, combine ingredients in bowl and mix. Dump onto floured surface. Follow directions for "Hand Kneading Bread". (Also, it is advisable to add the sunflower and sesame seeds at the end of the first kneading for best results.)
