Herb & Garlic Mold

1 lb. cottage cheese (small curd)
3 oz. cream cheese, softened
1/2 cup sour cream
6-10 garlic cloves, crushed
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh thyme
Freshly ground pepper to taste
3 tablespoons chopped fresh parsley

Line a large wire strainer with a double layer of cheesecloth or muslin. Beat cottage cheese, cream cheese and sour cream in a large bowl until smooth. Stir in garlic, parsley, thyme and pepper. Spoon mixture into prepared wire strainer and place over a bowl. Refrigerate overnight while mixture drains. Turn mold out on a flat surface. To garnish, roll mold in parsley. Serve with crackers and enjoy! Makes 6 to 8 servings.
