Garlic Carrot Prawns for Amazing Grazing!

2-3 carrots, scrubbed carefully and sliced into coins
6-8 cloves garlic, slivered
1 tablespoon unsalted butter
1 tablespoon extra-virgin olive oil
1 - 1/2 pounds fresh prawns, peeled and deveined
pinch of sea salt
1-2 teaspoons balsamic or raspberry vinegar, or lemon juice
parsley or other fresh herbs, freshly snipped

Place sliced carrots and slivered garlic in glass or ceramic batter bowl. Add butter and olive oil. Cover with glass or ceramic plate, or waxed paper. (Do not use plastic!) Cook in microwave for 3 minutes. Stir in the prawns, salt, vinegar and herbs, tossing together. Cook 2-3 minutes, or until prawns are pink. Do not over-cook. Serve. (This is wonderful chilled thoroughly and served at a picnic using toothpicks or fingers...personal experience speaking!)
