Tapas with Manchego Cheese

From Dorothy McNett's recipes at www.dorothymcnett.com. Figure about 2 slices per person, more or less!

12 slices French style bread, cut into 3/4 inch thickness
2 - 4 garlic cloves
sea salt
1/4 cup extra-virgin olive oil
1-2 tomatoes, diced
1/2 cup green Spanish olives, cut in half if very large
12 anchovy fillets (white anchovies if possible)
12 thin slices Manchego cheese

Dice and mash the garlic and add a pinch of salt. Mix with the oil. If desired, toast the bread slices under a broiler just until golden on each side. It is not always necessary to toast the bread if it is a firm and crusty bread. Drizzle each slice with the garlic mixture. Arrange tomatoes, olives, anchovy fillets, and cheese attractively over each bread slice. Arrange on a platter along with some fresh grapes, other fruits, etc.
