Spinach with Vinaigrette

From Dorothy McNett's recipes at www.dorothymcnett.com. Make this to serve with a cheese fondue!

1 to 2 tablespoons sherry vinegar (or other fruity vinegars)
1/4 teaspoon Dijon mustard
3 tablespoons extra-virgin olive oil
1 tablespoon minced fresh parsley
1 clove garlic, minced
1 1/2 teaspoons fresh thyme leaves, snipped
salt and pepper
fresh spinach leaves, washed and drained

optional small cooked potatoes, etc.

In a small glass measuring cup, whisk vinegar, mustard, olive oil, parsley, garlic, thyme, salt and pepper. Arrange the leaves on a big platter, drizzle the dressing over, and serve. Arrange potatoes, if using, to serve with the salad. If also serving a cheese fondue, each person gets to spear and dunk a potato into the cheese fondue and then eat some of the wonderful spinach salad!
