Swedish Rice Pudding

From Dorothy McNett's Recipe Book at www.dorothymcnett.com.

1 cup rice
2 cups water
3 eggs, beaten
4 cups milk
1/2 cup sugar
1 teaspoon real vanilla extract
2 tablespoons real butter, melted
cinnamon or nutmeg

Cook the rice with the water until done. Cool slightly, and then add the beaten eggs, milk, sugar and vanilla. Pour into baking dish, drizzle melted butter over top and sprinkle with cinnamon or nutmeg. Bake 1 hour at 325 degrees. Serve warm.
