Potato Latkes (Potato Pancakes)

4 potatoes (Russets suggested)
Scrub the potatoes, peel if desired. Using a box grater, or food processor, shred the potatoes and onion. Place in batter bowl and add the flour, egg, baking powder, and salt. Heat a heavy bottomed skillet and add oil to a depth of about 1/4 inch. Using a large tablespoon or a 1/8 cup measuring cup, drop mounds of the mixture into the hot oil, and cook until golden brown and crispy on one side. Flip over, flatten, and finish cooking. Repeat until all are cooked, placing finished ones on a warm platter. Serve with applesauce and sour cream.
