Tofu for Salads

From Dorothy McNett's recipes at Place fresh greens of choice in a beautiful salad bowl and toss with this wonderful mix! If desired, the tofu could be sauteed or grilled.

firm or extra-firm tofu
3-4 cloves garlic, slivered
1-2 tablespoons red-wine vinegar or a good quality balsamic vinegar
1-2 teaspoons sweet sherry or a pinch of sugar
1-2 tablespoons extra virgin olive oil
a pinch of sea salt
a few grindings of white peppercorns

Drain the tofu of the water, and cut into cubes. Place in a bowl and add the remaining ingredients and allow to marinate at least 30 minutes. Toss into your salads, pasta dishes, stir-frys, etc.
