Zippy Pintos with Ham Hocks

1 pound pinto beans, washed and soaked several hours
Wash and soak the beans several hours. Drain. In a heavy bottomed stock pot, heat the oil and sauté the onion and garlic several minutes. Add remaining ingredients. Cover. Reduce to simmer and cook for about 2-3 hours, or until tender to your taste. You may need to add more salt or pepper, taste to make sure!
