Fruit Salad with Greens
From Dorothy McNett's recipes at www.dorothymcnett.com. This is a wonderful taste sensation for a holiday dinner and can be made a few hours in advance and then refrigerated. (Hold the greens until ready to serve!)
In a batter bowl, whisk together the eggs and half and half. Whisk in sugar, salt, mustard, paprika, zest and juice. Microwave on high 30 seconds. Whisk well. Microwave on half power for 1 minute, and whisk well. Repeat until mixture has thickened and is smooth. This may take 3-4 minutes. Cool. Combine fruits and greens in a beautiful bowl and stir in the dressing.
