Sleigh Full of Salad from Around the World!

From Dorothy McNett's recipes at This is a wonderful taste sensation for a holiday dinner and can be made a few hours in advance and then refrigerated. (Hold the greens until ready to serve!)

3 eggs
1/2 cup half and half
1/3 cup raw sugar
1/2 teaspoon sea salt
1/2 teaspoon dry mustard
1/8 teaspoon sweet Hungarian paprika
zest of 1 orange or lime or lemon
1/3 cup citrus juice

2-3 apples, diced
1-2 grapefruit, sectioned
1-2 pears, diced
dried cranberries or cherries, or other dried fruits as desired
a variety of fresh salad greens, cabbage, etc.
interesting world wide cheeses, as desired, etc......

In a batter bowl, whisk together the eggs and half and half. Whisk in sugar, salt, mustard, paprika, zest and juice. Heat in microwave on high 30 seconds. Whisk well. Now cook on half power (power level 5) for 1 minute, and whisk well. Repeat until mixture has thickened and is smooth. This may take 3-4 minutes. Cool. Combine fruits and greens in a beautiful bowl and stir in the dressing. Serve with interesting cheeses and enjoy!
