Green Beans and Sesame Seeds

From Dorothy McNett's recipes at Serve these as an appetizer or as a side dish.

1 pound young green beans, stemmed but with the tender green tip intact
2 tablespoons water
1/4 cup sesame seeds (or flax or hemp seeds)
1 teaspoon red pepper flakes, or to your taste
1/4 cup extra-virgin olive oil
2 tablespoons fresh lemon juice
2 cloves garlic, minced
salt and pepper to your taste

Wash and stem the beans. Heat the water in a saute pan with a lid. When the water is just beginnning to boil, quickly add the beans, cover, and reduce heat to simmer. Cook, covered and do not peek, for 3 minutes. Then remove from heat, drain if necessary, and toss with remaining ingredients. Good hot, warm, room temperature, or chilled!
