Mandarin Orange Dessert

From Dorothy McNett's recipes at www.dorothymcnett.com. A favorite quick and easy dessert, very refreshing

1 pound cake, your own or a frozen one, defrosted
1 6 oz. can frozen orange juice concentrate, thawed and undiluted
2 tablespoons lemon juice
1/2 cup sugar
1 1/2 tablespoons cornstarch
1 tablespoon candied ginger, chopped
juice from 1 can mandarin oranges, reserving the oranges to add after cooking
fresh mint leaves for garnish

Slice the cake and arrange the slices on a large platter, or on individual dessert plates. Set aside. Whisk together the orange juice, lemon juice, sugar, cornstarch, ginger, and mandarin orange juice in a batter bowl. Microwave on high for 2 minutes. Whisk well. Microwave another 2-4 minutes, whisking after 2 minutes. Mixture will be thickening and glistening. Stir in oranges and pour over slices of pound cake. Garnish with mint leaves or slices of kiwi fruit.
