Parchment Chicken Appetizers

From Dorothy McNett's recipe book at www.dorothymcnett.com. These use parchment paper wrappers and steam to perfection in the microwave oven, or in a steamer basket. They make a wonderful appetizer, served warm or chilled.

2 skinned and boned chicken breasts
1 1/2 tablespoon cornstarch
1 tablespoon soy sauce
1 tablespoon sherry, or more soy sauce
2 teaspoons hoisin sauce
1 teaspoon sesame oil
2 - 3 cloves garlic, minced
2 green onions, thinly sliced
1-2 small sprigs cilantro, snipped

parchment paper, cut into 4 by 4 inch squares, about 20

Cut the chicken into thin strips. Combine remaining ingredients in bowl and marinate chicken at least 30 minutes. Place about 1 tablespoon of the mixture on the paper square with a pointed end facing you, placing chicken in the center a little above the center. Fold up the bottom towards the top, fold in the two sides, and bring the top down to tuck into bottom end. (looks like an envelope) Place folded side down on a flat plate or bowl. Cook 8-10 at a time about 3 minutes in the microwave, (check for doneness after 3 minutes, you may need to add 1 minute or so more) or place in a steamer basket and steam over boiling water on the burner about 10 - 15 minutes . Repeat with remaining bundles. Allow to cool slightly before eating as they will be hot! These are great party appetizers.
