Sage and Raisin Biscuits

2 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon sugar
2 tablespoons snipped fresh sage leaves
1/2 cup butter or lard, chilled
3/4 cup raisins or other dried fruits, snipped
1 egg, beaten
3/4 cup buttermilk or sour milk

Preheat oven to 375 degrees. Grease well a 8 inch cast iron skillet, or use individual pans. Warm cast iron pans in the oven while measuring ingredients. Whisk together the flour, baking powder, baking soda, salt, sugar, and sage leaves. Cut butter or lard into the mixture until it reaches the consistency of coarse corn meal. Stir in raisins. In a separate bowl, combine egg and buttermilk and add to flour mixture. Blend. Scoop into skillet. Bake 35-40 minutes.
