Hot Cakes

submitted by Kathy Kogle, Hollister, California and realtor at Coldwell Banker here in town. Kathy states that this was her mother's recipe and that these hotcakes were always so wonderful.

2 eggs, separated
1 1/2 cups milk, or a little more if needed
1 3/4 cups flour
2 1/2 teaspoons baking powder
pinch of salt
2 teaspoons sugar

Beat the egg whites and the egg yolks separately, and then fold together along with the milk. Sift together the flour, baking powder, salt, and sugar. Combine dry ingredients with wet ingredients, barely mixing. Bake on hot griddle.
