Vegetable Pasta So Simple

From Dorothy McNett's recipes at www.dorothymcnett.com. Choose any vegetable or combinations of already cooked vegetables. The key is fresh local vegetables, and interesting pasta, and real cheese!

3-4 carrots or celery, etc, thinly sliced
1 lemon, thinly sliced
2-3 tablespoons extra virgin olive oil
green onions, slivered
salt and pepper, to your taste
1 pound interesting pasta, cooked
freshly grated Parmigiano-Reggiano cheese

Combine carrots and lemon in batter bowl. Cover and cook in microwave for 4-5 minutes. Add the oil, onions, salt and pepper. Set aside. Cook and drain pasta, and stir in the sauce, adding more oil as needed. Toss with cheese and serve.
