Vegetable Pasta So Simple

From Dorothy McNett's recipes at Choose any vegetable or combinations of already cooked vegetables. The key is fresh local vegetables, and interesting pasta, and real cheese!

3-4 carrots or celery, etc, thinly sliced
1 lemon, thinly sliced
2-3 tablespoons extra virgin olive oil
green onions, slivered
salt and pepper, to your taste
1 pound interesting pasta, cooked
freshly grated Parmigiano-Reggiano cheese

Combine carrots and lemon in batter bowl. Cover and cook in microwave for 4-5 minutes. Add the oil, onions, salt and pepper. Set aside. Cook and drain pasta, and stir in the sauce, adding more oil as needed. Toss with cheese and serve.
