Ground Sausage Patties

From Dorothy McNett's recipes at Use a combination of ground meats to vary the flavor and texture of this basic sausage recipe.

1 pound ground beef, pork, lamb, or turkey, or combos
3 tablespoons fresh parsley
1-2 green onions, including the tops
2 cloves garlic
1/2 teaspoon dried sage
1/2 teaspoon dried marjoram
1/2 teaspoon fine sea salt
1/2 teaspoon freshly ground pepper
1/4 teaspoon dried thyme
1/4 teaspoon curry powder
1/4 teaspoon ground nutmeg
1/2 teaspoon sweet or smoked paprika
flour, if needed, to help mold and shape
1/2 cup oat bran or flour
extra-virgin olive oil for the saute

In a bowl combine the ground meat, parsley, onions, chopped garlic, and seasonings. You can always add more seasonings, as desired. Shape into patties, adding some flour if needed. Coat each patty with oat bran or flour. Heat olive oil in a skillet, and saute the patties just until browned on both sides and done throughout.
